DNO - In Duong Son Village, Hoa Tien Commune, Da Nang, the traditional handmade craft of making dried rice noodles remains a source of supply for the city's markets.
Rice is soaked, ground, pressed and dried through dozens of manual steps to produce strands of rice noodles that are soft, elastic and lightly aromatic.
Although the number of households practising the craft has declined, the remaining families continue production. The purpose is to keep the traditional craft alive and preserve a piece of culinary memory through each rustic yet heartfelt strand of noodles.
