Nam O fish sauce meets international quality standards
DNO - All tested samples of finished Nam O fish sauce recorded histamine levels below 50mg/L, fully meeting the standards set by the U.S. Food and Drug Administration (FDA), the European Union (EU), and the Codex Alimentarius.

The research results provided an important scientific basis for confirming the product’s safety and opening up opportunities for Nam O fish sauce to access premium markets and expand its export potential.
The information was released at a scientific workshop held on Friday as part of the city-level research project titled “Research on Solutions to Improve Quality and Diversify Nam O Fish Sauce Products” by the Da Nang Biotechnology Center under the municipal Department of Science and Technology.
According to Dr. Pham Chau Huynh, Director of the Da Nang Biotechnology Center and Head of the research project, the quality of Nam O fish sauce had long been assessed based on subjective perceptions, leading to differing opinions about the product.
Within the same traditional craft village, many fish sauce batches achieved high-quality quality standards.
However, consistency among production batches remained limited. The primary reason was that production processes were largely based on experience and had yet to be standardized and managed under a unified quality control system.
The objective of this research is not to improve a low-quality product but to enhance the consistency of a product that already possesses significant potential.
By standardizing production processes, the project seeks to reduce quality fluctuations and strengthen overall product reliability.
In recent years, fish sauce making facilities in the Nam O Craft Village have increasingly adopted food safety standards, conducted product quality testing, improved packaging and labeling, and implemented traceability systems.
The standardization of traditional production technologies is creating new opportunities for Nam O fish sauce.
From a product deeply rooted in local identity, Nam O fish sauce is gradually affirming its value through verified quality, contributing to the preservation of the traditional craft village, improving local livelihoods, and promoting one of Da Nang’s signature specialties to wider domestic and international markets.
